Safety and hygiene

Slide 1 of 14

Safety and hygiene on the job

Task A-1 covers how a cook keeps the kitchen safe for themselves and others: a safe work environment, personal protective equipment (PPE) and safety equipment, and personal hygiene. It is worth about 5 of the 150 questions on the Red Seal Cook exam.

Expect practical questions: a spill on the line, a chemical in the wrong bottle, a fire on the range, a cut finger during prep. You choose the safe next step.

This lesson covers hazards and your rights, knives, burns and slips, safe lifting, equipment and lockout, WHMIS and chemicals, PPE, fire safety, and personal hygiene.

Key pointSafety rules come from provincial and territorial occupational health and safety (OH&S) laws, WHMIS, public health regulations and company policy. Details vary by jurisdiction, so this lesson focuses on the principles they all share.
