K-29 Sandwiches

Hot, cold, open, and closed sandwiches, and production methods.

  • Spread butter when it is soft, and take it right to the edges so the whole surface of the bread is protected.
  • Cook grilled sandwiches at moderate heat, so the filling is hot and the cheese is melted by the time the bread is golden.

K-30 Salads

3 questions

Salad types, greens, composition, and presentation.

  • The key rule: dress tossed green salads and add crisp garnishes as close to service as possible. Marinated, bound and many grain salads can be made ahead and held cold.
  • Mixing greens adds contrast in colour, texture and flavour.

K-31 Condiments, preserves and dressings

Condiments (dips, relishes, salsas, syrups), preserves (pickles, jams, jellies), and dressings (vinaigrettes, emulsified, dairy-based, warm).

  • Emulsifiers work because one part of the molecule is attracted to water and the other part to fat.
  • Olive oil can turn cloudy and thick in the cooler. Let the dressing stand briefly and whisk it again before service.
